White Mushrooms

Button Mushrooms

White button mushrooms are the most commonly cultivated mushrooms in North America. White to cream in colour, button mushrooms have a mild, “woodsy” flavour that intensifies when cooked. They are excellent in anything, from salads to soups to side dishes.

Brown Mushrooms

Crimini Mushrooms

These rich, brown-coloured mushrooms are actually portobellas harvested at an early stage, before gill development. Criminis have a milder flavour than portobellas, but a stronger, slightly richer flavour than white button mushrooms.

Baby Bellas

Baby bellas are botanically identical to portobella mushrooms, but are smaller in size. These brown mushrooms have an intense, meat-like flavour when cooked.

Portobella Mushrooms

Also known as portabellos, these large brown mushrooms are at least three inches in diameter and have open veils, revealing the gills underneath. Their meaty texture and intense mushroom flavour make them a great substitution choice for vegetarian dishes.
